The Hui are a Muslim Chinese ethnic group that are concentrated mostly in northwestern and central China. There are 10,500,000 Hui people in the country, and they are closely related ethnically and linguistically to the Han Chinese. As a matter of fact, Hui people appear to be exactly the same as the Han Chinese until they are old, when old men where white caps and women wear white headscarves. In private life, Hui Chinese people practice Islam and therefore avoid eating pork, the largest source of meat in China, as well as practicing a special form of martial arts.
